OUR STORY

The name comes from the beautiful remote island at the head of the Marlborough Sounds where we grew up. The tough and unforgiving landscape of the island, shaped by the billowing winds of the Cook Strait, led to us moving operations from land to the flattest “paddock”, the sea. The Marlborough Sounds is one of the few places in New Zealand the endemic Greenshell Mussels are commercially farmed. The sheltered bays and abundant currents which draw in lots of nutrients, make for perfect Greenshell Mussel growing conditions.

OUR PROCESS

Thanks to our processing method, and our decision to keep mussels whole-shell, the quality of the meat and its natural flavour are both preserved and enhanced.
 

The shell acts as a natural barrier, protecting the meat from drying out and helping it stay tender, juicy, and succulent. In comparison, half-shell mussels are more prone to drying out and freezer burn over time.

When harvested, each mussel naturally holds around a teaspoon of seawater inside its shell. During the cooking process in the pouch, this liquid is released and retained, creating a rich, natural mussel stock.

​

This stock - often referred to by chefs as “liquid gold” - intensifies the mussel’s natural flavour. The result is a product that tastes remarkably close to live mussels, while still offering the convenience of a frozen format. By contrast, half-shell mussels lose much of their natural flavour during cooking and freezing.
